From a purely visual standpoint, I love the X-19. I don't have one, tried to win one on ebay a few times (only to lose to a business) but I love the look of it. That's for the JOe side. I've never been a big plane fan simply cuz they are too big for a lil guy like me to play with easily.
As for Cobra... I guess it'd be the NiteRaven. I've always like the look and love the history behind it.
Now, IF you said aircraft, it'd be a tight race 'tween NAC and X19 for GI Joe and hands down, the Mamba for Cobra. Never had a Mamba but what Outrider has shown me... Man... Totally awesome. Wish I had one.

for the joes i would have to say it's the phantom x-19 stealth fighter it was just a really cool really big joe plane
for cobra it would have to be the night raven only for the fact that it could carry two cobras and had the drone fighter on top that you could use as a fast attack craft o[r to help clear enemies out of the way

Yada, yada, yada...Night Raven, Rattler, Skysriker. My choice is the Mudfighter or the BF2000 Vector & the Cobra Liquidator (who would not want a Jet that pees at you!) Seriously, I look up from my desk & I have 2 & only 2 jets hanging from the ceiling - the Night Raven & the Skystriker!

Joes= Its gotta be the "Skystriker". I loved this plane when I was a kid, and wish I still had it. Loved it so much, I flew it most of the time in "Ace Combat 6". I also realized how limited this plane is to the current powerhouse F-22 Raptor. Which is my second fav, the "Thunderwing".
Cobras= The "Condor", never had one but it looks cool as all heck. Second is the "Nightraven". Look up the specs on the SR-71 "blackbird" and you won't be able to resist being a fan of this plane. Developed in the 60's and is still one of the most powerful planes to ever take to the skys. When missiles locked on to it, it simply outran them. IT. OUT. RAN. MISSILES. Only a handful were ever commisioned (I think 6). It was decommisioned because of extremely high maintenance costs.
