Right now, not much... Family Guy and American Dad... I just started watching The Spectacular Spider-Man (mainly because it's from Greg Weisman, the creator/producer of Disney's Gargoyles), and though I really don't like the character designs, I find it to be a pretty good show.
Other than that, I haven't really watched any cartoons regularly since Justice League Unlimited went off the air. That show's cancellation sapped my desire to watch anything else.

I used to watch a LOT of cartoons. GI joe, Planet of the Apes, spiderman (all versions), Batman, Godzilla, Valley of the dinosaurs, Johnny Quest (A Classic and still one of the best!!) StarBlazers, RoboTech, Shogun Warriors, StarShip troopers, Transformers, Thundarr the Barbarian, Battle of the Planets, Superfriends/Justice League.
Now I watch Tripping the Rift (when I can catch it) and occasionally Sponge Bob Squarepants (But only because the kids are watching it. I don't really watch Saturday Morning Cartoons much anymore......most of the are CRAP!
I also used to watch The Kroft SuperShow and Land of the lost (although, they may not be considered cartoons!)
Damn, did I just give away how old I am again?
